Pumpkin Everywhere!
It's that time of year and I have to admit that I have a pumpkin obsession. I thought I would post a few of my favorite pumpkin recipes over here. As always, change them to suit your preferences. happy

Crustless Pumpkin Pie

1 can (15 oz.) Libby's 100% Real Pumpkin
1/3 cup egg whites
6 oz. Skim Milk (I've been using almond milk lately)
6 oz. Sugar Free Vanilla Davinci Syrup (I used to do this, but use stevia lately)
1 1/2 tsp. Pumpkin Pie Spice and cinnamon to taste

Put all ingredients in a bowl and mix. Pour into a Pam sprayed glass pie pan. Bake at 425 for 15 minutes and then decrease temp to 350 and bake for an additional 45-60 minutes. When the pie is browned on the top it's done.

I eat these ALL the time. If you look at my MFP diary, it's there at least 3-4 times per week.

Pumpkin Protein Pancakes

•1/2 cup old fashioned oats
•1/4 cup cottage cheese
•1/4 cup canned pumpkin
•1 egg
•4 T. egg white
•1/2 teaspoon cinnamon

•Spray pan with cooking spray and heat to a medium heat
•Combine all ingredients in blender
•Pour batter onto the warm pan to form giant pancake
•Allow to cook until edges start to harden, about three minutes
•Flip pancake and allow to cook until batter is no longer runny, about two more minutes
•Top with syrup, honey, nutmeg or desired toppings and enjoy

I haven't tried these yet, but I plan to make a batch this week!

Pumpkin Bites

1 1/2 cups Rolled Oats
1/4 cup nut butter
1/4 cup local honey
1/2 cup pureed pumpkin
1/2 cup pureed apples
1/2 mashed ripe banana
3 scoops Vanilla Protein Powder
2 TBSP Pumpkin Spice
1 tsp Cinnamon

**optional – raisins, nuts, dates, chocolate chips

Preheat oven to 350. Toast oats for 10 minutes. Mix the wet ingredients together, then dry. Then add together. Can bake in 8×8 baking dish and bake for 20-25 minutes. Allow to cool. Or bake as small drop cookies or 8-10 minutes.

And don't judge me, but I eat this weird thing regularly. I adjust the ingredients depending on my calories for the day.

Pumpkin Goo
1/2-1 cup pumpkin
1/2-1 scoop vanilla protein powder (sometimes egg protein, sometimes whey)
1 T. cocoa powder
1 T. PB2
1/4 ounce cacao nibs
2 T. cacao bliss
Stevia to taste

I sometimes even add a bit of cottage cheese and use the hand blender to make it smooth and freeze it for an hour or so.

I'm talking to myself here, but had to say that I made the Pumpkin Bites today and they were so good! I made them with a tablespoon of honey and a sprinkling of stevia, plus a few tablespoons of chocolate chips. I made 22 cookies and they came out to 67 calories and 5g of protein per cookie. Good eats!

The crustless pumpkin pie sounds sooo good! And we have like, 20 bottles of different DaVinci syrups around the house. big grin Not kidding. I'm definitely making this someday soon! lovestruck

Here is an old WW recipe that has pumpkin in it. It's amazing and supposed to be a healthier version of Chili's chicken enchilada soup. All I know is I can get my 7 year old to eat it. happy

The Whole Enchilada Chicken Soup

1 carton chicken broth
1 cup finely chopped celery
1/2 cup diced sweet yellow onion
1 big can enchilada sauce
One 15-oz. can pure pumpkin
Boneless skinless lean chicken breast, chopped (whatever amount you want)
1 small can white corn- drained
1 can diced tomatoes-drained
1 can of black beans- drained and rinsed
Spices- chilli powder, cumin, taco seasoning

Throw everything in a slow cooker and cook on low for 6-8 hours.
