Apple Crockpot Pudding
I'm on a roll today! I love this recipe- it's an old one from my Weight Watchers days. I sub a lot of the ingredients for different things, now and the recipe is very flexible and forgiving. But this is the original.

Apple Crock Pot Pudding

6 apples peeled and cut into bite size pieces place in crock pot
2/3 cup egg white
1/2 c. whole wheat flour (can use oat bran)
1 1/2 c. steel cut oats
1/2 c. Splenda (I use some stevia now)
2 tsp. baking powder
1/4 tsp. salt
1 tsp. vanilla
1 1/2 tsp apple pie spice or 1 tsp. cinnamon and 1 tsp. grated nutmeg
1 1/2 c. skim milk

Spray crock pot with Pam, put apples in crock pot, mix all other ingredients together and pour over apples stir and cook for 4 hours on low.
